Skilled Practice

In this chapter I shall provide a detailed ethnographic account of skill as a contested and value-laden aspect of the modernising practice of mountain cattle breeding and cheese-making. Grounding the discussion of the issue in the ethnography of dairy farming, I wish to convey how debates about what constitutes ‘good' practice feed into, and are shaped by, local visions of place. Different views about development are encompassed in the aesthetics and moral order of actual practices; here, I shall explore various aspects of breeding (such as artificial selection, machine-milking and cheese-making). We shall see how the discourse about what makes a beautiful cow, a skilled milker or a good breeder is now more subject to transformation and compromise due to their increasing standardisation, regulation and technologisation.
