I purchase my spelt flour at the Health food store, spelt flour is better for people who are gluten sensitive, and diabetic, and are watching their acidity. I try to use as many ingredients that are alkaline, and I left out the truvia and used strictly Xylitol after my family got used to Xylitol, because it can make some people's stomach upset. When your family is used to this recipe, take out the truvia and use 1 cup of Xylitol. Xylitol is good for diabetics. I have a concession stand in my auction house, and I always serve this blueberry up-side down cake to my diabetic customers, and they love it. Also, I have gluten sensitive partrons who say that they can eat my desserts without the heart burn and upset stomach.
