Raw Curry 3 Course Meal
This is a 3 course meal for those who are either passionate about raw food or for those who want to try raw food but need some help with ideas.
Personally I love curries and the bright colours and spices work so well together as a raw dish. I was inspired by the health giving properties of the bitter melon which apparently is a great vegetable to eat if you have diabetes type II (please google and do your own research). I made bitter melon dehydrated chips with maple sugar to sweeten a little.
You will need an icecream maker for the dessert and a cream whipper with an N20 cartridge for the coconut cream. If you can't get process a ripe coconut and make your own cream, you can cheat and use some store bought coconut cream which comes in small tins and works just as well. Put the tin into the fridge to really cool, blend with a little almond milk and agave and fill the cream whippers instructions - it works really well and tastes just like real whipped cream.
