Luscious Lacuma Lemon Cakes
This is a seriously zesty, fluffy and light raw lemon and lacuma cake. The ingredients are all mostly raw and organic ingredients. The only additional and sparingly (non raw) ingredient used to give the topping a whipped texture is a cooled down secret ingredient which Kirsty Wright discovered works amazingly well with raw cupcake toppings, and also cuts costs on using too much coconut oil. This ingredient does not affect the raw ingredients and is made from seaweed.
